Equipment used to keep item cold is in the right condition and working properly. __________________ 5. No unplanned loss from procedure adopted to cool or preserve item. That is, food, etc. is not damaged or destroyed as a result of packaging, etc. 6. Item kept in desired state will remain in condition for the period required or hoped for. 7. Process and/or equipment used to keep or preserve item is controlled or controllable. 8. Serves purpose(s).
